Usually cameras and a small edge machine per line. The heavier requirement is controlled lighting, which is cheap and matters more to accuracy than the model does.

Detection runs at the edge so alerts fire in well under a second. Cloud is for storage, training, and reporting, not the decision.

It gets flagged as anomalous rather than classified, and a person labels it. New classes are added deliberately, with their own validation, instead of being guessed at.
